Morgenster Olive Nursery

Following a drastic bout of frost between 1984 and 1985, over 80% of the olive trees in central Italy died. In the hopes of rekindling the cultivars, Italian professor Fontanazza made the biggest contribution to olive oil production methods in thousands of years.

The Morgenster Olive Nursery Methods

The Morgenster System for olive oil follows Italian Professor Fontanazza's revolutionary methods:

The new system uses a few guidelines to increase both quality and quantity:

  • Planting the prime cultivars in the optimum soil and climatic position
  • Pruning in a monocone shape
  • Harvesting at the peak of ripeness
  • Processing the olives within two days of harvesting
  • Utilising temperature control methods during olive processing
  • Storing olive oil in cold and dark conditions

This is done by:

  • Selecting the best cultivars from around the world
  • Planting the low vigour varieties to increase the number of trees per hectare, and thus yield per hectare
  • Conditioning trees to mechanical harvesting and pruning methods

Our nursery grows the most important cultivars for quality oil production as well as for table olive processing.
